Candied Nuts and Bacons 10.24.2010
Brown sugar and water (how much water? um…..eh….um…..enough to make wet sand, not a lot of water really). Boil the mixture until you see thick big bubbles. Pour the mixture and mix evenly with toasted nuts (almond this time) and bacon bits. Spread the batch to let cool, and very soon you’ll have candied crunchy bits! Sure, put it on salad or steamed vegetables. Yeah, that looks healthier. Yeah, go with that so my mom can stop frowning.

The beautiful mango I bought were not ripe. Bummer!
To make the rock hard mango eatable for dinner salad, I shredded the mango as fine as possible. To highlight the mango flavor, I used corn syrup mixed with olive oil and a little water. The ribs turned out too spicy so I added chopped mint to the mango in hope to ease the heat from the main course. Amazingly, everything worked together. Dinner saved, phew!
